Volume Primo is Archivio's vermouth, produced at Antica Distilleria Quaglia in Piedmont and selected alongside the Tasi range. Created for the Verona bar project, it uses a Moscato-and-Grillo base, fortified and flavoured with botanicals. Fruit, sweetness and herbal bitterness come together for an aperitivo pour or a favourite cocktail.

  • Aromas: Aromatic fruit and herbs, with thyme, sage, chamomile, liquorice and a touch of vanilla contributing to a fragrant, Mediterranean-style profile.
  • Palate: Soft and fruity, with sweetness balanced by savoury herbs and bitter wormwood and gentian. The finish is rounded rather than aggressively bitter.
  • Style: An aromatic, fortified vermouth at 18% alcohol, designed for both sipping and mixing; enjoy in smaller pours than a table wine.
  • Winemaking: Moscato and Grillo form the wine base, which is fortified and infused with botanicals. Grape must, sugar and a little caramel add body, while bitter and aromatic herbs establish the vermouth character.
  • Cellaring: Store unopened somewhere cool and dark. Once opened, refrigerate and aim to enjoy within four to six weeks, while the wine and botanical aromas remain fresh.
  • Food Pairing: Olives, salted nuts, salumi or hard cheese with an aperitivo pour; use it in a Negroni or other vermouth cocktail alongside savoury snacks.

A good vermouth earns its place on the drinks shelf in more than one way. Try Volume Primo over ice with a citrus twist, lengthen it with soda or bring its balanced herbal character to a cocktail. An appealing choice for building a little Italian aperitivo ritual at home. Start with a small pour over ice and a citrus twist, then explore how the botanicals change with dilution.

Tasi

Above the Illasi Valley, at the edge of Verona’s Lessinia mountains, Tasi tells a story of renewal. Its estate was once a quarry, and the project places the restoration of the landscape at the centre of its identity. Emerging from the experience of the Fasoli wine family and their collaborators, Tasi brings a younger, independent spirit to the region’s traditions. Corvina, Corvinone, Rondinella and other local varieties connect its reds with Verona, while Garganega and Glera contribute to the wider collection.

Regenerative organic farming, biodiversity and the relationship between vineyards, woodland and animals shape the estate’s daily work. The same measured approach continues in the cellar through spontaneous fermentation and maturation in cement and large neutral oak. Tasi presents wines with an emphasis on freshness and balance, allowing the landscape to guide the result. Even its name carries personality: in Venetian dialect, “tasi” means “be quiet”, an invitation to pause and pay attention. For drinkers interested in thoughtful farming and a distinctive producer story, Tasi offers an appealing meeting of regional heritage and a landscape being brought back to life.
