The 2015 Stefano Lubiana Grande Vintage is a premium, beautifully expressive sparkling wine that honors the pioneering biodynamic blueprint of Steve Lubiana, widely regarded as a master of cool-climate Tasmanian viticulture. Sourced from the estate's celebrated, north-facing hillside vineyard in the Derwent Valley, this pristine release captures all the signature purity and zesty energy of a classic, cool-climate vintage.
  • Aromas: Toasty brioche, almond croissant, and lemon peel, layered with honeysuckle and a clean, wet-stone mineral edge.
  • Palate: White nectarine, crisp green apple, and grapefruit pith, riding over a focused, flinty mineral backbone.
  • Style: Bone-dry, vibrant, and incredibly refreshing, balancing a generous burst of fruit with a laser-sharp acid line and a long, clean finish.
  • Winemaking: Crafted using the traditional method with a premium blend of estate Chardonnay and Pinot Noir, aged on lees for nearly a decade to lock in rich, secondary texture.
  • Cellaring: Deliciously fresh and ready to enjoy right now, but possesses the excellent structure and drive to age gracefully in the cellar through 2035+.
  • Food Pairing: Pairs wonderfully with freshly shucked oysters, kingfish ceviche, pan-seared white fish, or spicy Southeast Asian salads.

This bottle is an absolute powerhouse, packing a masterclass in extended lees aging and cool-climate precision. It completely redefines Australian sparkling, dropping a complex, electric profile and uncompromising biodynamic craftsmanship that easily runs circles around mainstream Champagne.

Our 2015 Grande Vintage Brut, a 60/40 blend of Chardonnay and Pinot Noir.  An epic wine with 11 years on lees, and disgorged in July 2024. The nose is reminiscent of lemon peel, honeysuckle, mineral and a hint of fresh honeycomb. There is a fine bead and delectable mousse. The palate is lithe with bright lemon, jazz apple and winter nelis pear with balanced acid. Hazelnut meal, honey nougat and marzipan back up the fresh first impression carrying into a long finish. Drinking beautifully now this wine can also benefit from further bottle ageing.

A single-vineyard, estate-grown blend of 50/50% chardonnay/pinot noir from the Derwent Valley. Pale in the glass with a fine, energetic bead and mousse. Aromas of crunchy green apple, nashi pear and citrus fruits with hints of brioche, mushroom, white flowers, flint, toast, almond paste, roast chestnuts and meal. Long, savoury and true with a real sense of mineral drive and toasty complexity, finishing very long with a saline, acid cadence. Wonderful drinking.
