Matthiasson Phoenix Cabernet Sauvignon 2019 is a perfumed, beautifully structured red from Napa Valley. Planted in 1982, Phoenix Vineyard occupies a steep, east-facing hillside of ancient marine shale. Its distinctive soils and mature vines yield a Cabernet with expressive red fruit, an elegant palate and a persistent finish.
- Aromas: Fragrant red fruits lead an expressive bouquet, with an exotic, lifted character.
- Palate: Bright fruit and a graceful mid-palate give way to a long, firm finish. Structure and freshness bring balance and definition.
- Style: A dry, elegant Cabernet Sauvignon with depth, poise and the individuality of a single vineyard.
- Winemaking: Hand-harvested in several passes, fermented in small open-top tanks and punched down by hand. Matured for 20 months in French oak barrels and a large oak foudre, with 20% new French oak.
- Cellaring: Enjoy now after decanting, or cellar for further development. Store in a cool, dark location.
- Food Pairing: Try roast lamb with rosemary, grilled beef or mushroom Wellington.
A distinctive Napa Cabernet for a special dinner, combining aromatic charm with lasting structure.
