Edi Kante's Sauvignon comes from the Carso's limestone landscape near Trieste, where the estate gives familiar international varieties a restrained, savoury interpretation. Old-oak handling adds texture without making wood the main flavour. It is a Sauvignon for drinkers who enjoy aromatic freshness alongside a little more depth at the table.

  • Aromas: Citrus and herbal suggestions, with the variety's aromatic freshness framed by a savoury, mineral impression rather than an exuberantly sweet tropical perfume.
  • Palate: Fresh and textured, with a rounded middle and a lingering, stony finish. The balance makes it suitable for food as well as an opening glass.
  • Style: A dry, medium-bodied Sauvignon with measured aromatic fruit, restrained oak influence and a savoury limestone character.
  • Winemaking: The winemaking includes twelve months in old oak followed by six months in stainless steel. The wine is neither fined nor filtered, retaining Kante's emphasis on texture and gentle handling.
  • Cellaring: Enjoy now. Prioritise drinking over further ageing, as delicate fruit can fade with time.
  • Food Pairing: Grilled fish, prawns with herbs, goat cheese, asparagus or roast chicken; citrus dressings and green herbs complement the grape's freshness.

If Sauvignon is your regular choice, this is an interesting change of pace. Kante brings a little more texture and a savoury edge to the familiar grape. Put it beside dinner, let it warm slightly in the glass and enjoy the Carso's quieter expression. Serve cool rather than ice cold, allowing the fragrance and texture to show more clearly in the glass.

Kante

In Prepotto, on the rocky Carso plateau near Trieste, Edi Kante has created a winery inseparable from its dramatic surroundings. This is a landscape of limestone, red earth, sea breezes and the powerful Bora wind, where growing vines demands both ingenuity and persistence. Vitovska and Malvasia give the collection a distinctly local identity, alongside Chardonnay and other varieties. Kante’s work is driven by a personal search for balance, with freshness, precision and the character of the Carso at the centre of the wines.

The cellar is part of that story: carved into the natural rock on several levels, it reaches around eighteen metres below ground, providing a setting for patient maturation and bottle ageing. Kante is particularly associated with whites that combine texture with acidity and savoury depth, inviting drinkers to explore how they develop over time. Traditional-method sparkling wines add another dimension. His artistic personality also extends to the labels. For lovers of distinctive northern Italian whites, Kante offers a memorable encounter between an individual winemaker and a demanding, deeply expressive landscape.
