La Bora is Kante's selected Chardonnay from the Carso, named for the wind associated with the Trieste area. Long maturation gives the familiar grape a deeper, more savoury expression. This is a Chardonnay for drinkers who enjoy texture, developed flavours and the balance between creamy richness and a mineral finish.

  • Aromas: Lemon and pineapple notes are joined by vanilla, butterscotch and toasted accents, creating a mature, gently creamy aromatic profile.
  • Palate: Textured and rounded, with freshness and a saline impression supporting the richer flavours. The finish is layered rather than simply buttery or fruity.
  • Style: A dry, substantial selected Chardonnay with extended maturation, developed complexity and a balance of richness and savoury definition.
  • Winemaking: The winemaking includes twelve months in old oak, twenty-four months in steel and three years in bottle. The patient sequence builds texture and allows the wine to develop before release.
  • Cellaring: A mature white for drinking now, with potential for further development in bottle. If ageing further, store in a cool and dark location. Before opening stand upright to settle sediment, and taste before choosing gentle decanting or further aeration.
  • Food Pairing: Roast poultry, lobster with butter, mushroom risotto or creamy pasta; choose dishes that meet its richness without overwhelming the savoury finish.

For Chardonnay lovers who enjoy a mature, thoughtful bottle, La Bora is a rewarding choice. Give it a generous glass and let it warm slightly from the fridge. It is the sort of white that can hold your attention right through an unhurried dinner. Serve cool in a generous glass, allowing time for the mature aromas and texture to unfold gradually.

Kante

In Prepotto, on the rocky Carso plateau near Trieste, Edi Kante has created a winery inseparable from its dramatic surroundings. This is a landscape of limestone, red earth, sea breezes and the powerful Bora wind, where growing vines demands both ingenuity and persistence. Vitovska and Malvasia give the collection a distinctly local identity, alongside Chardonnay and other varieties. Kante’s work is driven by a personal search for balance, with freshness, precision and the character of the Carso at the centre of the wines.

The cellar is part of that story: carved into the natural rock on several levels, it reaches around eighteen metres below ground, providing a setting for patient maturation and bottle ageing. Kante is particularly associated with whites that combine texture with acidity and savoury depth, inviting drinkers to explore how they develop over time. Traditional-method sparkling wines add another dimension. His artistic personality also extends to the labels. For lovers of distinctive northern Italian whites, Kante offers a memorable encounter between an individual winemaker and a demanding, deeply expressive landscape.
