The Paringa Estate "The Paringa" Pinot Noir 2021 is an ultra-premium, deeply complex, and beautifully structured cool-climate red wine from the Mornington Peninsula, Victoria. Produced by founder Lindsay McCall, this single-vineyard flagship release represents the absolute pinnacle of the estate's Pinot tree, combining incredible fruit concentration with an ethereal, long-lasting structure.
  • Aromas: Highly fragrant and perfumed, bursting with red cherry and fresh raspberry, layered with rose petals, dried herbs, porcini mushroom, and a touch of five-spice.
  • Palate: Intense, juicy, and beautifully focused, delivering crunchy red currant and sour cherry fruit wrapped around a core of gorgeous stony tannins and lively acidity.
  • Style: A world-class, powerhouse Pinot Noir that masterfully trades heavy extraction for pure fruit clarity, understated elegance, and massive structural length.
  • Winemaking: Sourced exclusively from the original 1985 plantings on the home vineyard, the fruit undergoes wild fermentation on skins before extensive maturation in premium French oak barrels.
  • Cellaring: Displaying an absolute masterclass in balance and tight structural coil, this 2021 flagship is built for a slow reveal and will cellar spectacularly for 10 to 15-plus years.
  • Food Pairing: Phenomenal with upscale Asian dishes like Peking duck pancakes, char siu pork belly, tea-smoked quail, or a rich wild mushroom stir-fry with XO sauce.
This is a breathtaking, blue-chip Pinot Noir that trades brute force for pure liquid symmetry and a silky, fine-spun texture. It treats you to an incredibly graceful mix of bright woodland berries and subtle herbal spice, while keeping a vibrant, light-footed energy that glides effortlessly across the palate.

The Paringa has a reputation for being a powerful expression of pinot noir, no doubt about it, but sometimes, a vintage offers up this wine with comparatively more restraint and vibrancy thanks to acidity. Don’t think for a minute this is a wallflower, it’s rich and detailed, full of dark cherries, blood orange, amaro and a smoky, twiggy character. Full bodied with densely packed tannins a little raspy but detailed and juicy. I suspect this is going to cellar very well
